Great side dish for Thanksgiving with a hint of savory and sweet which balances the flavor of the winter squash. We use butternut in this recipe but could replace with many other varieties of winter squash such as Acorn, Delicata, Kabocha and more.

Instructions
Winter Squash
  1. Preheat oven to 350'F.
  2. In a large bowl, toss the winter squash with 4 tablespoons each of olive oil and brown sugar. Season with salt and pepper.
  3. Spread on a cookie sheet and bake for 1 hour or until lightly caramelized and tender.
  4. Arrange on a platter on top of the baby greens and drizzle with the maple syrup.
Sage Cream
  1. In a sauce pan, bring the cream and sage to a simmer and cook for 5 minutes over medium heat.
  2. Remove from heat and let stand for 5 minutes.
  3. Stir in butter and season with salt and pepper.
  4. Serve over the winter squash, top with parmesan cheese. Serve.
