Winter Squash
  1. Preheat oven to 350’F.
  2. In a large bowl, toss the winter squash with 4 tablespoons each of olive oil and brown sugar. Season with salt and pepper.
  3. Spread on a cookie sheet and bake for 1 hour or until lightly caramelized and tender.
  4. Arrange on a platter on top of the baby greens and drizzle with the maple syrup.
Sage Cream
  1. In a sauce pan, bring the cream and sage to a simmer and cook for 5 minutes over medium heat.
  2. Remove from heat and let stand for 5 minutes.
  3. Stir in butter and season with salt and pepper.
  4. Serve over the winter squash, top with parmesan cheese. Serve.
